Honey processing is a method where only the ripest coffee cherries are picked and taken to a mill to be de-pulped. While most of the cherry is removed during the de-pulping, the remaining golden sticky mucilage which has the appearance of honey remains on the bean while drying. The coffee is spread and rotated on raised beds and patios to dry without washing the mucilage off, setting the stage for a sweet coffee with velvety smooth texture. . . It also makes for a more environmentally friendly process as a fraction of the water is used as compared to a washed coffee 🌱 . Can't wait to enjoy this coffee with you! 🙂$
