New year, new coffees! We're working to bring you two new coffees in January. An Indonesian coffee that will be full bodied and have a juicy, round mouthfeel, as well as a delicate and sweet Colombian. We roast small batches of these new coffees a number of times using different methods to figure out the time, speed and temperature that brings forward the wonderful origin characteristics these coffees have to offer. Science largely dictates the roast parameters we'll experiment with but then our taste buds and multiple rounds of blind cupping help us identify what actually tastes the best. The rounder shaped peaberry, formed from the rare maturation of one seed per cherry rather than the typical two seeds is meticulously sorted during the milling process for its distinct flavor profiles.
